1 1/2 lb. grouper fillets
1/2 cup unsweetened orange juice
1 tablespoon virgin olive oil
1 tablespoon honey
1/2 teaspoon seasoning of choice
4 medium oranges, peeled
2 heads iceberg lettuce
3/4 cup chopped green onions
1/2 cup fresh basil leaves, chopped
1/4 teaspoon white pepper
Cut grouper into four equal portions. Combine orange juice, olive oil, honey, and seasoning in shallow container and mix. Coat fish with marinade and keep in refrigerator on hour, turning once.
Slice oranges into 1/4" rounds and arrange three on a plate. Peel outer leaves from lettuce and discard; slice remaining lettuce into 1/2" rounds. Place lettuce rounds and onions on orange slices and arrange basil leaves on lettuce. Season with white pepper.
Grill grouper, basting with marinade. Place grilled fish over salad and serve immediately.
