Recipe for Turkey Gyros


1/2 small onion

2 tbsp italian parsley

2 garlic cloves, pressed

1 lb 93% lean ground turkey

1/2 tsp dried thyme

1/2 tsp salt

1/2 tsp pepper

2 tsp evoo

4 flat pita bread rounds, without pockets

sliced cucumber

sliced tomatoes

Tzaziki (yogurt sauce):

1/2 cup plain yogurt

2 garlic cloves, pressed

1/8 tsp salt

2 tbsp Italian parsley

1/4 cup cucumber, finely chopped

Preparation Method

To start gyros:

1. Preheat oven to 500*

2. Finely chop onion and parsley. Set aside 2 tbsp of parsley for sauce.

3. Press garlic into mixing bowl.

4. Add onion, parsley, turkey, thyme, 1/2 tsp salt, and black pepper. Mix until well blended.

5. Form turkey mixture into four thin, rectangular loaves, about 1/4 in thick.

6. Add oil to a skillet and hear over medium heat.

7. Cook formed turkey loaves 1-2 minutes on each side or until browned.

8. Place turkey loaves in a 13x9 (or the skillet if it can go in the oven) and place in the oven.

9. Bake for 6-8 minutes or until internal temperature reaches 165* and loaves are no longer pink in middle.

While the loaves are in the oven prepare the sauce:

10. In a bowl combine yogurt, pressed garlic, salt and reserved parsley.

11. Finely chop cucumber and add to the bowl. Mix well.

To finish the gyros:

12. Place pita bread on a microwave safe plate and heat on high for 30-60 seconds, transfer to serving plates.

13. Slice cucumbers and tomatoes.

14. Remove turkey loaves from oven; slice thinly lengthwise.

15. Arrange over pita bread.

16. Top each gyro with 1 tbsp yogurt sauce and slices of cucumber and tomatoes.
