Recipe for Thai Inspired Ginger Chicken Salad

Agave, raw (Southwest)

2.0 x 1 ounce (28g)

Basil, fresh

5.0 x 1/4 cup leaves, whole (6g)

Chicken, broilers or fryers, breast, meat only, raw

16.0 x 1 ounce (28g)

Coriander (cilantro) leaves, raw [Chinese parsley, raw, Cilantro, raw]

Garlic, raw

1.0 x 1 clove (3g)

Ginger root, raw

5.0 x 1 tsp (2g)

Lemon grass (citronella), raw

5.0 x 1 tbsp (5g)

Lettuce, butterhead (includes boston and bibb types), raw

Lime juice, raw

Noodles, chinese, cellophane or long rice (mung beans), dehydrated

Sauce, fish, ready-to-serve

2.0 x 1 tbsp chopped (10g)

Preparation Method

Whisk chopped Thai chili's, lime juice,agave, and fish sauce together, add 2 teaspoons minced ginger, and minced garlic in a small bowl. Set dressing aside. Cook mung bean noodles in a large pot of boiling water. To do this bring water to a boil and add noodles, remove from heat and cover for about two minutes, drain well and put in a large bowl. Meanwhile, heat 1 tablespoon of oil in a large skillet. Add 1/2 cubed chicken; stir 1 minute. Add 1 tablespoons minced fresh ginger, minced shallot, and minced lemongrass. Stir until chicken is cooked through, 3–4 minutes. Add to noodles. Add half of all herbs chopped finely and half of dressing; toss to coat. Line bowls with lettuce leaves. Divide noodle mixture among bowls. Top with remaining herbs and dressing. Enjoy!
