Recipe for Summer Stawberry and Burgundy Soup
Ingredients

3-4 pints of strawberries, washed & hulled

1 cup water

1/4 cup sugar or 4 packets artificial sweetener

1/4 cup all purpose flour

2 cups Burgundy wine

2 cups unsweetened orange juice

3 cups plain yogurt

1 cup milk

sliced strawberries

mint leaves

Preparation Method

Quarter strawberries and in a saucepan cook over low heat in water for 10 minutes

In a separate saucepan, over medium-high heat, combine the sugar and flour. Stir in wine and orange juice. Heat, stirring constantly until the mixture boils, approximately 10 minutes. Remove from the heat immediately and add the strawberries and cool. Puree' in a blender or food processor and add yogurt and milk. Chill before serving, and garnish with strawberries and mint leaves.
