Recipe for Sicilian Asparagus
Ingredients

Asparagus, raw

1.0 x 1 cup (134g)

Cheese, Parmesan, shredded

1.0 x 1 ounce (28g)

Egg, whole, cooked, hard-boiled

1.0 x 1 large (50g)

Lemons, raw, with peel

0.5 x 1 fruit without seeds (108g)

Oil, olive,

2.0 x 1 tsp. (4g)

Parsley, raw

0.5 x 10 sprigs (10g)

Salt, table

1.0 x 1 dash (0g)

Spices, pepper, black

1.0 x 1 dash (0g)

Preparation Method

Preparation

This is a wonderful side dish enough for two people, I usually increase the recipe to make it a light and wonderful meal. I love when the asparagus pops out of the garden.

Toss asparagus in the olive oil, salt and black pepper.

Place onto a baking sheet and bake at 400 degrees until cooked and tender.

Place asparagus on a platter and squeeze lemon over to taste.

Coarsely chop hard-boiled egg then sprinkle over asparagus.

Top with the Parmesan cheese. Garnish with parsley and enjoy.

You can serve this warm or cold.

Remember to use fresh organic ingredients whenever possible
