Recipe for Roasted Yellow Tomato and Pepper Soup

Certified Organic Vegetable Broth

2.0 x 1 cup (235g)

Garlic, raw

4.0 x 1 clove (3g)

Oil, olive, salad or cooking

2.0 x 1 tbsp (14g)

Onions, raw peeled and quartered

1.0 x 1 medium (2-1/2" dia) (110g)

Peppers, sweet, yellow, cut into slices

2.0 x 1 pepper, large (3-3/4" long, 3" dia) (186g)

Salt, table

1.0 x 1 dash (0g)

Black Pepper

1.0 x 1 dash (0g)

Thyme, fresh

1.0 x 1 tsp (1g)

Tomatoes, yellow, halved

36.0 x 1 ounce (28g)

Preparation Method

Cut tomatoes in half, cut peppers into quarters, peel garlic and slice onion into wedges,

Preheat oven to 450°F. Arrange tomatoes (cut side up), bell peppers, onion and garlic cloves on large baking sheet. Drizzle oil over; sprinkle generously with salt and pepper. Roast vegetables until brown and tender, turning peppers and onion occasionally, about 40 minutes.

Remove from oven. Cool. Transfer vegetables and any accumulated juices to processor. Add thyme leaves. Puree soup, gradually adding enough vegetable broth to thin soup to desired consistency.

Chill until cold, about 3 hours. (Can be prepared 1 day ahead. Cover and keep refrigerated. If soup becomes too thick, thin with water to desired consistency.)

This excellent cold but is just as amazing hot. Enjoy

Ladle soup into bowls. Garnish with thyme sprigs, if desired.I used cilantro!
