Recipe for No Shell Fish Taco

Coriander (cilantro) leaves, raw [Chinese parsley, raw, Cilantro, raw]

Fish, salmon, Atlantic, wild, cooked, dry heat

Preparation Method

Skin and cut salmon into thin slices and place into a bowl with lime juice, salt, cumin, garlic, black pepper, chipolte pepper, olive oil and chopped cilantro. Let marinade in fridge for at least 1 hour. Seed and thinly slice peppers into strips. Peel and slice onions. Place on a baking tray and season light with salt and pepper. Shred lettuce and 1/4 cup of cilantro thinly and place into a bowl and toss lightly with dressing. Dressing: Mix 1 ounce olive oil, 1 ounce of lime juice, 1/4 teaspoon cumin, 1/4 teaspoon chipolte pepper, 1/4 teaspoon garlic powder, a dash of salt until well combined. Roast sliced vegetables in a pre heated 400 degree oven until done, about 12 to 15 minutes. Place marinated salmon on a parchment paper covered baking sheet and broil on high on upper rack until just opaque, about 6 minutes. Plate each dish with dressed lettuce and cilantro, top with salmon and vegetables. Serve with guacamole. Enjoy!!
