Dressing: Mix 1 ounce olive oil, 1 ounce of lime juice, 1/4 teaspoon cumin, 1/4 teaspoon chipolte pepper, 1/4 teaspoon garlic powder, a dash of salt until well combined. Roast sliced vegetables in a pre heated 400 degree oven until done, about 12 to 15 minutes. Place marinated salmon on a parchment paper covered baking sheet and broil on high on upper rack until just opaque, about 6 minutes. Plate each dish with dressed lettuce and cilantro, top with salmon and vegetables. Serve with guacamole. Enjoy!!
