Recipe for Moroccan Mashed Potatoes
Ingredients

10 large baking potatoes (peeled & cubed)

1/2 tsp ground cumin

1 tbsp salt

2 tsp ground black pepper

3 tbsp olive oil (or as needed)

1 onion (diced)

1 tbsp ground turmeric

Preparation Method

Place the potatoes into a large pot & fill with enough water to cover.

Bring to a boil over medium-high heat & cook until tender & can be pierced with a fork for about 20 minutes.

Place 1 tbsp olive oil in a skillet & heat over medium-high heat.

Stir in the onion & cook until translucent & lightly browned for about 6 minutes.

Drain water from the potatoes & mash. Stir in the onion & continue mashing.

Mix in the turmeric, salt, pepper & cumin. Add the remaining 2 tbsp olive oil or amount desired to make the potatoes more or less creamy.
