Recipe for Mexican Ranch Style Beans
Ingredients

1 bag dried pinto beans

1/2 fresh garlic head

1 whole yellow onion, diced

1 large can stewed tomatoes

3-4 jalapenos or seranos

1 fresno chile

bacon

chicken stock

gluten free beer

1 bunch cilantro

chicken stock

cumin

oregano

salt and pepper

lime

Preparation Method

Rinse and soak beans overnight covered with water. Drain, add to a large pot, cover with more water about two inches above the beans. Add a half bulb of garlic, bring to a boil, reduce heat and cook for about 2 hours or until beans are tender. Add more hot water as the level drops, season with salt when almost done.

Cook about 3 strips of thick-cut bacon until crispy and rendered down. Add onions, garlic, jalapeno and fresno chile peppers and cook for 3 minutes.

Add: 1 can stewed tomatores, 1 bunch chopped fresh cilantro, cooked beans, 1 bottle gluten free beer, chicken stock to cover, the juice of one lime, cumin, oregano, and salt and pepper to taste. Bring to a boil, reduce heat and cook for 20 minutes. Garnish with cilantro and lime.
