Half a box of low-carb angel hair pasta
15oz can of petite diced tomatoes (I use plain or with garlic, onion, or basil) with liquid
1 small sweet onion julienned
4 cloves garlic diced
2 large sprigs of fresh basil chopped or use dried
1 box of chicken stock-not low fat or sodium (about 4.5 cups)
1/2 tsp red pepper flakes
2 tsp dried oregano
2 T EVOO
Grated Parmesan cheese
In medium saucepan, add ingredients in order listed. After you pour the chicken stock, add the pepper flakes and dried oregano, then drizzle the EVOO on top. Cover pot and bring to a boil. Reduce heat to simmer until pasta is done. I like to put the lid back on after the heat is off to keep the pasta from absorbing all the stock as I eat it for the next few meals. I also mix fresh grated cheeses to my dish and with some black pepper & Fresh Basil!
