Recipe for Italian Shrimp Scampi

2 tablespoons Olive Oil

1 cup sliced mushrooms

4 green onions (sliced)

1 tablespoon garlic (minced)

2 (14oz) cans diced tomato - not drained

1/2 cup chopped fresh parsley

1/4 cup white wine

12oz. box linguine (or fettacini) cooked

1/2 lb. raw shrimp (cleaned)

2 tablespoons lemon juice

Preparation Method

saute onions, garlic and mushrooms in the olive oil....add in the canned tomato with the juice, white wine and parsley...simmer about 30 minutes...add the lemon juice and shrimp, simmer till all shrimp turn pink....toss in cooked pasta and serve....can sprinkle fresh grated parmesan cheese over top
