Recipe for Hungarian Stew

2 tbs Coconut Oil or Ghee

2 lbs Beef Stew Meat

2 Carrots (cut into 1/2-inch rounds)

1 Green Bell Pepper (diced)

1 small White Onion (diced)

6 Garlic Cloves (minced)

4 tbs Smoked Paprika

2 tsp Caraway Seeds

5 oz. Tomato Past (Bionaturae Brand)

6 cups Beef Broth

2 cups Peeled and Diced Winter Squash or Sweet Potatoes

Sea Salt and Black Pepper to taste

Preparation Method

1.)In a large soup pot, heat the coconut oil or ghee over medium, heat.

2.)Add the stew meat and brown for 5-7 minutes.

3.)Add all of the veggies to the browned beef along with the garlic, stir well, and cook for 10 minutes.

4.)Add the paprika and caraway seeds and mix well.

5.)Cook for another 5 minutes.

6.)Pour in the tomato paste and beef broth, mix well, and bring to a boil.

7.) Turn the heat down so that the stew is just at a simmer and cook uncovered for 1 hour.

8.)Add the diced winter squash or sweet potatoes and cook for another 1 to 1 /2 hours.

9.)Before serving, season with sea salt and black pepper to taste.
