Recipe for Grilled Vegetable Salad & Roast Beef
Ingredients

3 cups red, green & yellow peppers, seeded & cut into 1" strips

1 cup zucchini, sliced 1/2" thick

1 cup yellow, summer squash, sliced 1/2" thick

4 oz. vinaigrette dressing

Assorted salad greens, torn into bite-sized pieces & kept chilled

6 oz. Cream Havarti Cheese with Dill cut into 1/4" chunks

4 oz. Deluxe Roast Beef, cut into 1/2" strips

1/4 cup Blue cheese crumbs

1/2 cup black olives chopped

2 sprigs fresh dill

Preparation Method

In large bowl toss vegetables and dressing. Remove with slotted spoon, reserving dressing. Grill 15 minutes or until tender, turning frequently. Return grilled vegetables to reserved dressing, cover & refrigerate. While vegetables chill wash assorted greens & tear into bite-sized pieces. Cover bottoms of 6 salad plates with greens. Toss cream Havarti cheese & roast beef with grilled vegetables & dressing. Spoon unto the beds of greens. Sprinkle with Blue cheese sparingly with teaspoon, sprinkle black olives & garnish with a sprig of dill
