Recipe for Curried Scallops over Turmeric rice
Ingredients

Ingredients:

1 pound large scallops cleaned

1 cup basmati rice

2 cups of water

Sea salt to taste, for rice

1 tsp. ground turmeric

2 Tbsp. olive oil

1 tsp. curry power

Preparation Method

Preparation:

Combine rice, 1 Tbsp. olive oil, pinch of sea salt, and 1 tsp. turmeric and cook according to package directions.

Dust the scallops very lightly with the curry powder.

In a very hot saute pan add the remaining olive oil and sear scallops quickly about 3 minutes per side, do not overcook. Serve immediately over turmeric rice. Enjoy!
