Recipe for Chicken Adobo

4-5 lbs. chicken, cut in pcs

1/4 cup apple vinegar

1/2 cup Filipino soy sauce (local Asian market should have it)

2 tsp sugar

6 cloves garlic, crushed

1 crushed dried basil leaves

1 tsp. black peppercorns

3 bay leaves

Preparation Method

Combine all of the ingredients in a large pot and then cover and marinate chicken for 1-3 hours.

Bring to boil, then lower heat. Cover and let simmer for about 30 minutes, stirring occasionally.

Uncover and simmer for about 20 minutes until sauce is reduced and thickened, and chicken is tender.

Serve with steamed rice.
