3 lbs. Potatoes, cooked, peeled, and whipped
1/2 cup chicken broth
6 oz. cottage cheese
1 green bell pepper, chopped (red/yellow) if desired.
1/2 to 1 cup shredded Cheddar cheese
2 tablespoons grated Parmesan cheese
Preheat oven to 350. Whip the cooked potatoes with the broth, cottage cheese, green pepper, and Cheddar cheese in a bowl. Place in a baking dish and top with Parmesan Cheese. Bake for 30 minutes, until golden brown.
