Recipe for Broiled Peaches with Raspberry Sauce and Whipped Coconut Cream

Agave, nectar raw

1.0 x 1 ounce (28g)

Lemon juice, raw

1.0 x 1 wedge yields (6g)

Nuts, coconut milk, canned (liquid expressed from grated meat and water)

4.0 x 1 ounce (28g)

Peaches, raw

2.0 x 1 large (2-3/4" dia) (175g)

Peppermint, fresh [mint]

1.0 x 2 tbsp (3g)

Raspberries, raw

1.0 x 1 cup (123g)

Vanilla extract

0.25 x 1 tsp (4g)

Water, bottled, generic

1.0 x 1 fl oz (30g)

Preparation Method

Prepare Raspberry sauce by blending raspberries and water in a blender until smooth. Strain mixture through a fine sieve to remove all seeds.To this add lemon juice a bit of the agave. Cover and place into fridge until ready to serve. Choose classic Organic canned coconut milk, open can and remove cream from top and reserve water for something else. Put coconut cream into a bowl, add vanilla to taste and beat with a whip until whipped cream texture is achieved. Cover and place into fridge until ready to serve. Cut Peaches in half and remove pits. Score skin and brush lightly with Agave. Broil on low both sides until cooked and semi soft. Let cool to room temperature and plate. Set 1/2 peach in each bowl and drizzle raspberry sauce over each peach. Top each with coconut cream and chopped fresh mint. Top with a whole raspberry if you like. Enjoy!! This recipe can be made by grilling the peaches also.
